recipe #7: strawberry ginger ice cream (tastes better at home).

as most people, i often crave fresh strawberry ice cream but not so much paying $4 each scoop as they usually run in my Greenpoint neighborhood (apparently The New York Times feels the same way). i realized i had milk, sugar, heavy cream and strawberries in my fridge so i just made my own. I WIN! (cough, sorry.)

recipe #7: strawberry ginger ice cream.

ingredients: 3 cups chopped strawberries, 1/2 cup sugar, 1/8 cup orange juice, 2 cups fat free milk, 1 pint heavy cream, 1/2 cup sugar, white chocolate (optional).

directions: first, i made a strawberry compote by heating 3 cups of choppedĀ berries with a 1/2 cup of sugar and splash of OJ until soft and slightly syrupy. i let that cool down while i whisked together two cups fat free milk, a pint of heavy cream and 1/2 cup sugar in a large bowl, then let that cool down too. once both were chilled, i added to my ice cream maker with some fresh ginger to taste, and an hour later enjoyed my creation out of a bowl usually reserved for family-size meals.

i chose to make mine pretty light because ice cream is my very biggest weakness and i can find a way to justify eating at any time of the day. i would add more cream and perhaps use a custard style recipe (egg) if making it for others, not shoveling in my face while watching “Mean Girls” in bed. oh, and I also shredded some white chocolate to compensate for any calories i may have saved skimping on the heavy cream. DOUBLE WIN!
